Roasted Veggie Pasta Sauce

This has become my go-to recipe in our daycare for the kids. They LOVE it and it includes plenty of veggies!

Cut up one red pepper, one cup of carrots, a few garlic cloves, one eggplant, a handful of mushrooms, one tomato and toss it with some olive oil on a baking sheet lined with parchment paper.

Roast in a preheated 400F oven for about 45 mins or until everything is soft.

Cool down for 5 minutes and place in a food processor with 1 cup of your favourite tomato sauce and blend until smooth.

Toss the sauce with your kids favourite cooked plain pasta and serve. I always make LOTS so I can freeze it for an easy weeknight meal later.
